Aurelia Blue Signature Cocktails: Created Between Rain Squalls and Sunsets

Some drinks begin with a recipe. Ours often begin with weather, a market bag, a guest’s idea or the last lime in the galley.

The rain has stopped, the cockpit is still wet and a band of orange appears beneath the clouds. Someone finds the ice, someone cuts fruit, and an ordinary evening becomes one of the moments people remember from the voyage.

Rainy Days Have Their Own Rhythm Aboard

Caribbean sailing is not a continuous sequence of cloudless afternoons. Rain arrives quickly, sometimes dramatically, and occasionally decides to stay.

On those days, life moves inward. Towels hang wherever they can, conversations become longer and the galley becomes a natural meeting point. A quiet afternoon can turn into a tasting session with fruit, herbs, spices and whatever bottles are already aboard.

These are not formal cocktail workshops. They are shared moments: someone remembers a drink from home, another guest suggests a name, and Chris adjusts the balance until the idea works in the glass.

The Best Ingredient May Be a Guest Saying, “I Have an Idea”

Guests are welcome to bring a favourite recipe, introduce a drink from home or invent something new from what we find aboard and in local markets. Some experiments remain experiments. Others earn a name and become part of the collection.

A Sundowner Is About the Moment Around the Glass

The appeal of a sundowner is not simply alcohol. It marks a transition. The heat softens, the work of the day is finished and the anchorage changes colour.

A refreshing drink fits naturally into that pause. It may be citrus-forward, lightly spiced, fruit-based or completely alcohol-free. What matters is that it suits the weather, the people and the pace of the evening.

On Aurelia Blue, we prefer drinks that feel generous without becoming heavy. Tropical flavour should remain fresh, and a good cocktail should invite conversation rather than end it.

Names Come from Places and Incidents

A rain squall, a turtle beside the yacht, a difficult night watch or the colour of a bay can all become the starting point for a drink name. The story helps us remember the recipe — and the recipe helps us remember the voyage.

From Market Stall to Cockpit Glass

Local markets change what is possible. Mango, passion fruit, pineapple, tamarind, ginger, coconut, herbs and unfamiliar citrus varieties can redirect a recipe completely.

Chris’ experience as a chef is useful here. He thinks in flavour relationships: sweetness against acidity, spice against fruit, aroma against texture. The goal is not to add everything available, but to decide what the drink is actually about.

Sarah brings the practical side of boat life. A recipe must be manageable in a real galley, use ingredients sensibly and avoid unnecessary chaos when the yacht is moving.

A Note from the Crew

Some of our best drinks were never planned. They began with a rainy afternoon, a few limes, something cold in the fridge and a guest saying, “I have an idea.”

The best part is often not the final recipe but the conversation around it — tasting, adjusting and finding a name that everyone still remembers after the voyage.

— Sarah & Chris, Aurelia Blue

Your Creation Can Become Part of the Story

Guests do not need bartending experience. A favourite flavour, a memory or a rough idea is enough to begin. We can refine the balance together or create an alcohol-free version that keeps the same character.

Not every drink needs to become an official Aurelia Blue signature. But when a combination captures a place or a shared moment particularly well, it may earn a card of its own.

With or Without Alcohol

Every good idea can be reconsidered as a lighter or alcohol-free drink. The flavour, story and ritual of a sundowner do not depend on alcohol.
