The Aurelia Blue Cockpit Bar: Caribbean Cocktails, Guest Creations and Desserts in a Glass
A small onboard bar shaped by island ingredients, classic recipes, rainy afternoons, guest ideas and the pleasure of ending the day together in the cockpit.
The Cockpit Bar is not a fixed counter aboard Aurelia Blue.
It appears when the sailing day slows down, the anchor is settled
and someone reaches for limes, coffee, fruit or a bottle brought
from another island.
A Bar That Begins with the Moment
Some evenings begin with a clear plan: a well-made Daiquiri,
a Rum Punch or a classic drink someone has been looking forward
to all day. Others begin after a tropical shower, when the cockpit
is still wet, the air cools and nobody feels ready to disappear
into a cabin.
Those are often the best Cockpit Bar evenings. We look at what is
available, open the fridge, cut fruit and let the conversation decide
what happens next. A guest may remember a favourite recipe from home.
Someone else may suggest a new combination. Chris adjusts sweetness,
acidity and texture until the idea works in the glass.
The result may be a familiar classic, an Aurelia Blue creation or
something halfway between a cocktail and dessert. What matters is
not complexity, but balance — and the story that becomes attached
to the drink.

Bring a favourite recipe, a bottle with a story or simply an idea.
Some guest creations stay with the voyage. Others earn a name,
return on another evening and may eventually become part of the
Aurelia Blue collection.

The Cockpit Bar is organised into three collections. Each has its
own character: established classics, drinks created around life aboard,
and small after-dinner pleasures built around coffee, ice cream,
chocolate, fruit and rum.

Why Classics Still Matter
Classic cocktails provide the structure behind improvisation.
They show how spirit, sweetness, acidity, bitterness, dilution
and aroma work together. Once that balance is understood, it becomes
easier to adapt a recipe to a different rum, a local fruit or the
ingredients available aboard.

More ingredients do not automatically make a better result.
A simple combination can feel complete when every element has a purpose.
From Island Market to Cockpit Glass
Mango, passion fruit, tamarind, ginger, coconut, nutmeg and unfamiliar
citrus varieties can change a recipe immediately. Local ingredients
are not added simply to make a drink look tropical; they should give
it a clear flavour and connection to the place where it was created.

Cockpit Bar Desserts now has its own complete collection: from the
two-ingredient simplicity of Affogato to the Caribbean-born Bushwacker,
New Orleans Grasshopper, Irish Coffee and our own mango, banana and
rum creations.
Each page keeps the recognised recipe at its centre, adds the history
where it is known, explains the technique that makes the difference
and suggests common variations without turning every classic into
an Aurelia invention.
A Note from the Crew
Some of our best evenings aboard were not planned as events.
They began with rain, leftover coffee, ripe fruit or a guest
remembering something they had not tasted in years.
We like the Cockpit Bar because it allows knowledge and improvisation
to sit together. Chris brings decades of gastronomic experience,
guests bring memories and ideas, and the Caribbean supplies more
flavours than we could ever fit into one voyage.
